Why the Ikejime method is so important

It’s a quick and humane way to dispatch the fish with as little stress as possible. This is vital when it comes to providing a unique product as well as extended freshness.  

The fish is cut, within a few seconds, severing the nerve connecting spinal cord and the to the brain, in order to stop the “survival signal”. The bleeding process is carried out immediately in iced water and the fish is then ready for packing within a few hours.


Tasting Notes

This is a  firm white fish perfectly suited for all types of raw and sashimi preparations as well as all cooking techniques.  It can be grilled, baked, poached, sous-vide, seared or used in any type of raw or crudo presentation.

Nordic yellowtail Kingfish is a meaty fish and is popular for its versatility, taste and texture. Thanks to the farming techniques, this fish has a higher and more consistent fat content than its wild counterparts.
