Dover Sole

Solea senegalensis

Refined & Pure

Icelandic farmed European Dover Sole is cultivated in the country’s famously pure water. The fish are raised in a biosecure environment resulting in an exceptional flavor and delicate texture. European Dover Sole is iconic thanks to the lean, firm flesh with elegant flake. From modern to classic preparations, chefs will enjoy working with this fish, relying on consistent quality and supply year round.

Commitment to Quality & Traceability

Stolt Sea Farm has long been a pioneer in sustainable aquaculture.  For their Icelandic sole farm, they use pure water which has been filtered through the lava and ash bed, resulting in a constant 32ºC temperature, sterile water source. This warm water is then mixed with cold seawater resulting in the perfect temperature for the sole (22ºC) all year round.  This is a sophisticated, state-of-the-art facility.

The farm is able to leverage unique natural resources and innovative technology, resulting in a highly sustainable and controlled operation resulting in a super premium, tasty and reliable fish.

Flavor & Texture

Our European Dover Sole has a clean, succulent taste. When it comes to the meat, the fine white flesh has a delicate flake. It is a perfect fish for fillets as well as table-side preparations.  This sole is perfect for grilling, pan-frying, steaming, broiling or baking.

Feeds

Feeds used for this sole are completely free of GMOs and land animal products. The marine content (fish oil and fish protein) is high.

Environmental Controls

This land-based facility employs strict environmental controls. The tanks are cleaned with water and chlorine, with no anti-fouling paint used. The effluent tubes are too small for the fish to escape and all water parameters are monitored constantly.
